Pinwheel A La Carte Suggestions: Zesty Mediterranean Chicken Dinner

This is a crowd pleaser: bright, light, flavorful, and filling. Quick and easy to prepare, to boot!

  • Locust Point Farms All Natural Boneless Skinless Chicken Thighs, thawed

  • Sparoza Handcrafted Cooking Blend with Herbs & Lemon Zest

  • Washed, Prepped Frozen Brussels Sprouts

  • Agrozima Imported Spelt Orzo (or omit the orzo & replace with rice for a gluten-free meal)

Cook the Spelt orzo according to the package directions. 

Marinate the chicken thighs in a mixture of olive oil, lemon juice, salt, pepper and 2-3 teaspoons of the Sparoza Herb Blend for 45 min. to 2 hours in the refrigerator. (marination is optional, but it does boost the flavors!) Bake chicken in a lightly oiled baking dish in an oven preheated to 400 degrees; bake until cooked through (about 23-45 min. depending on number of chicken thighs cooked). 

Microwave the sprouts for approximately 1 minute in microwave to partially thaw them; cut the sprouts in half and toss in a liberal amount of olive oil until lightly coated. Roast in oven or toaster oven at 450 degrees until lightly browned, stirring once or twice to get an even roast. Finish with a drizzle of olive oil, lemon juice, salt, pepper & a sprinkling of the Sparoza cooking blend, if desired. 

 Serve the chicken over orzo, accompanied by the roasted Brussels Sprouts.
