Pinwheel A La Carte Suggestions: Savory Southwest Short Ribs (in the Crock Pot/ Instapot)

 For a meltingly tender and delicious short ribs dish that requires virtually no labor…

  • Liberty Delight Farms All Natural Boneless Short Ribs (thawed)

  • 1 jar Serious Foodie Mirasol Mole Cooking Sauce (complex, with all the nuances of sophisticated Mexican cooking, but with minimal heat)

  • Your Organics Ready-to-Eat Black Beans

  • Southwestern Sweet Potatoes

Combine the short ribs with a jar of the Mirasol Mole sauce and .5 cup of water in your pot. Add a quartered onion and 2 carrots cut into large chunks, if so desired. Set your cooker to low heat for 4-6 hours, or at high heat for 3-5 hours (as the short ribs are boneless and contain very little fat, you want to be careful not to dry them out by overcooking.)

In the last 45 -60 min. of cooking, add 1-2 pouches of Your Organics Black Beans to the pot and mix in well with the ribs. 

Serve the ribs & beans over rice if desired, accompanied by the Southwestern Sweet Potatoes. Enjoy!
