Roasted Green Beans with Parmesan

All vegetables seem to be “their best selves” when roasted. These roasted green beans - with parmesan and panko bread crumbs - are in all ways exceptional: crunchy, cheesy, satisfying! Kids'll gobble these up before you can say “good for you,” so in all ways a total win.

Serves: 4; Preparation time: 15 minutes

Ingredients

  • 1 lb. Pinwheel Local Green Beans (thawed under warm water and patted dry)

  • 2 Tbsp. olive oil

  • 2 Tbsp. grated parmesan cheese

  • 2 Tbsp. panko bread crumbs

  • ½ tsp. kosher salt

Instructions

  1. Preheat oven to 400F. Combine all ingredients in a large mixing bowl; toss to coat.

  2. Spread green beans on a large rimmed baking sheet, lined with foil.

  3. Roast for 15-20 minutes; stirring halfway through. Salt & pepper, to taste, and serve!
