Greens, Grains and Beans with Pesto Dressing
On the table in 15 minutes, this nutritious this nutritious main or side dish makes a perfect bowl meal. You can top it with chicken or salmon if you want an extra punch of protein.
Serves: 4; Preparation time: 15 minutes
Ingredients
- 3/4 lb. Pinwheel Local Green Beans (frozen) 
- 2 cups Pinwheel Broccoli Florets (frozen) 
- Agrozimi Spelt Orzo, or other grain or small pasta (couscous, pearl barley, and farro work well) 
- red onion ½, finely chopped 
- 1 jar Bella Cucina Pesto (Mint & Pistachio or Sage & Walnut) 
- Your Organics Kidney Beans 10 oz. pouch, rinsed and drained 
- red wine vinegar 2 tbsp 
- olive oil 2 tbsp 
- salad greens of your choice 50g 
Instructions
- Drop the broccoli and green beans into a pan of boiling salted water. Boil for a minute then drain and rinse under cold water. Drain well. 
- Cook the orzo (or other grain/pasta) following package instructions. Tip into a bowl with the onion, pesto, kidney beans, vinegar and oil. Toss everything together then add the drained veggies. Add salt & pepper as needed, and a squeeze of lemon juice, if desired. Place salad greens on plates and top with the green bean mixture.
