Greens, Grains and Beans with Pesto Dressing

On the table in 15 minutes, this nutritious this nutritious main or side dish makes a perfect bowl meal. You can top it with chicken or salmon if you want an extra punch of protein.

  1. Drop the broccoli and green beans into a pan of boiling salted water. Boil for a minute then drain and rinse under cold water. Drain well.

  2. Cook the orzo (or other grain/pasta) following package instructions. Tip into a bowl with the onion, pesto, kidney beans, vinegar and oil. Toss everything together then add the drained veggies. Add salt & pepper as needed, and a squeeze of lemon juice, if desired. Place salad greens on plates and top with the green bean mixture.
