Superfood Buddha Bowl with Ginger-Tahini Dressing

Our Superfood Medley Ready Dish makes quick work of this recipe. With its quinoa, brown Basmati rice, roasted sweet potatoes, spinach, peas, and pumpkin seeds, the Medley brings together healthy ingredients and a variety of textures and flavors. The Buddha Bowl recipe enhances the Medley with even more healthy elements and a gorgeous dressing. This is a perfect option for vegan, vegetarian, gluten-free and omnivore diets!

Serves 2-4; Prep time 20 min.


Instructions

  1. Preheat your oven or toaster oven to 450F.

  2. Toss the drained chickpeas with olive oil until evenly coated, spread in a single layer on a baking sheet covered with foil, and roast until lightly browned (approx. 10-12 minutes), stirring once or twice to get an even roast. Taste for seasoning and adjust salt & pepper, if necessary.

  3. If you wish to add the egg as a topping, poach or boil it as you prefer.

  4. For the Ginger-Tahini Dressing pulse tahini, lemon juice, honey, garlic, ginger in a food processor. Season with salt to taste (about 1/4 tsp) and fresh ground pepper. Add water and process mixture until smooth and creamy.

  5. Heat the Superfood Medley in the microwave as per package instructions, top with the kale, chickpeas, and any optional toppings you are using.

  6. Drizzle with the Ginger-Tahini Dressing and serve

Ingredients

Optional toppings:

  • 1 egg (poached or boiled)

  • 1/2 avocado, diced (optional)

  • 1/2 cup chopped tomatoes

  • 1/4 cup Feta cheese

  • Fresh basil leaves, chopped

Ginger-Tahini Dressing

  • 1/3 cup tahini

  • 2 1/2 Tbsp fresh lemon juice

  • 2 Tbsp honey

  • 1 small clove garlic, peeled

  • 1-inch cube peeled fresh ginger, peeled

  • 3 Tbsp water
