Baked Lemon Butter Sole

So elegant and scrumptious and equally quick & easy to make! The butter sauce is a simple mixture of melted butter, lemon juice, lemon zest, fresh minced garlic and dried dill. Serve with simple steamed green beans with olive oil, chopped garlic, salt & pepper.

Serves: 6; Preparation time: 20 minutes

Ingredients

  • Four or Five 4-oz skinless, boneless Alaskan sole fillets (frozen), patted dry

  • 4 Tbsp unsalted butter, melted

  • 3 Tbsp fresh lemon juice

  • Zest from 1 lemon (about 1 tablespoon)

  • 1 Tbsp fresh minced garlic

  • 1/4 tsp dried dill

  • Kosher salt and freshly ground black pepper, to taste

  • 1 small lemon, thinly sliced (optional)

  • Fresh chopped parsley, for garnish (optional)

Instructions

  1. Preheat your oven to 425F. Spray a large baking dish or rimmed baking sheet with cooking spray.

  2. In a medium bowl, stir together the melted butter, lemon juice, lemon zest, garlic and dill.

  3. Place sole fillets in baking dish and season lightly with salt and pepper.

  4. Drizzle butter mixture evenly over the fillets. Top with lemon slices, if desired.

  5. Bake for 8-10 minutes, then broil on high for 1-2 minutes to lightly brown. Fish is cooked when it flakes easily with a fork. Sprinkle with fresh chopped parsley, if desired, and serve immediately.
