Your Weekend Menu: THREE meals in under 30 minutes

Most of us are looking to our weekend time as an opportunity to recover from the multiple challenges we juggle during the week, and to recharge for the week ahead.  Pinwheel can help you save that precious time for things other than slaving in the kitchen. Below are some great meal options, requiring less than 30 min. prep time…


Turkey Burrito Meal

This is a lean, healthy and complete dish full of bright southwestern flavors; only mildly spicy. Serves 2 (using 1 lb. of turkey filets) or 4 (using 2 lbs. of turkey filets).

Instructions

  1. Saute the onion & garlic in vegetable oil on medium-high heat in a sauté pan until softened.

  2. Add the turkey fillets and 1/2 jar of the Hatch Chile Cooking Sauce, drained black beans and .5 cup of water; sauté 5-8 min. at high heat (depending on the quantity of turkey used) until cooked through; cook a further 2 min. if needed to evaporate any excess liquid. 

  3. Wrap the turkey & beans topped with sour cream and tomatoes (if desired) in tortillas, accompanied by the Southwestern Sweet Potatoes. Enjoy!


Plant-based Powerhouse Meal

If you’re craving a dose of healthy ingredients and a variety of textures and flavor, this is the combo for you; it’s a perfect option for vegetarian and/or gluten-free diets. Quick, simple, filling and delish!

Instructions

  1. Preheat your oven or toaster oven to 450 degrees.

  2. Toss the drained chickpeas with olive oil until evenly coated, and roast chickpeas until lightly browned, stirring once or twice to get an even roast.

  3. Drizzle the Tomato Feta Flavor Burst over the roasted chickpeas (the Flavor Bursts are highly concentrated, so a little goes a long way!), add a sprinkle of olive oil and salt & pepper to taste.

  4. Serve the chickpeas alongside the Superfood Medley (hot or at room temperature), topped with diced tomatoes, feta cheese, and chopped basil, if desired, as well as heated asparagus & pepper quiches.

Instructions

CRABCAKES:

Heat according to package instructions.

ORZO SALAD

  1. Cook the orzo according to the package directions. 

  2. While the orzo is cooking, preheat your oven or toaster oven to 450 degrees. Toss the broccoli florets in a liberal amount of olive oil until lightly coated. Roast the florets until lightly browned (about 10-12 min. in most ovens), stirring once or twice to get an even roast. Finish with a drizzle of olive oil, a squirt of lemon juice, and salt/pepper to taste.

  3. Add the roasted broccoli florets to the cooked & drained orzo. Drizzle with olive oil and mix thoroughly. Adjust salt & pepper, and top with Parmesan, chopped tomatoes, and optional parsley.

    ICE CREAM

    1. Add all ingredients to a blender and blend until smooth.

    2. Transfer to a freezer safe container, and freeze until the ice cream reaches your desired consistency (45. min. should give you soft serve consistency; leave it in longer for a firmer consistency)
