Pinwheel Provisions is fortunate to have partnered with Lila Colello, founder of Flakely Gluten-Free Pastry & Artisan Breads to provide our customers on the Main Line exclusively with Flakely’s sophisticated creations in the French tradition.
Chef Lila, an acclaimed pastry chef who trained at the French Culinary Institute, has held posts at some of the nation’s top restaurants including the Ritz Carlton and Wolfgang Puck Catering. After being diagnosed with Celiac Disease she made a mission of developing “taste identical” baked goods, indistinguishable from their wheat flour inspirations, to those who avoid gluten. Flakely’s products are created using French technique and quality local ingredients, but steering clear of the nemesis that has caused so many to have forfeited their favorite breads, rolls, pastries, etc. for years.
Among Che Lila’s meticulous creations are her brioche loaves, baguettes, challah loaves and brioche buns, with numerous other products in development. Her products are light and crispy on the outside, and rich and buttery with a tender crumb inside. Even those don’t avoid gluten are likely to become converts!
Pinwheel Provisions is the exclusive distributor of Flakely on the Main Line, and we are delighted to feature Chef Lila’s products in our Online Store. Currently we are only able to sell Flakely products through our Online Store for curbside pickup or home delivery on Tuesdays and Fridays (Saturday pick up arrangements at te Pinwheel shop may be made directly with Flakely).

Flakely’s Gluten-Free Holiday Stuffing
Traditional, Delectable, and Digestable!
Ingredients
· 1 loaf Flakely Brioche Bread (about 9 cups of bread cubes)
· ¾ cup butter
· 1 medium yellow onion, chopped
· 4 sticks celery, thinly sliced
· 1 ½ teaspoons dried thyme leaves
· ½ teaspoon ground sage
· ½ teaspoon rosemary
· 1 teaspoon salt
· ½ teaspoon pepper
· 2 cups chicken or vegetable broth
Instructions
1. 1/4 cup of dried cranberries (optional) Let bread slices defrost at room temp for 1 to 2 hours, then cut into 1-inch pieces. You can also pop these in the toaster or air fryer to dehydrate a bit from frozen.
2. In a large boiling pot or nonstick skillet, over medium heat, melt butter. Add onion and celery and cook until the onion is soft and translucent.
3. Stir in thyme, sage, rosemary, salt, and pepper.
4. Add bread cubes and mix until evenly coated.
5. Drizzle broth over the bread mixture and toss until well mixed.
6. Stuff turkey, or bake in a greased 2.5 qrt casserole dish at 350°F (180°C) for 35 to 45 minutes.
