Raw Honey Cake

This cake is perfectly suited to showcasing Instar Apiaries’ Raw Philadelphia Honey. It works well as a dessert, but we won’t tell if you have a slice for breakfast also!


Serves: 8 Cooking time: approx. 50 minutes of active cooking time, plus prep


Ingredients

Honey Cake Ingredients:

  • ¾ cup of plain yogurt

  • 1 cup sugar

  • ¾ oil

  • 1 teaspoon vanilla extract

  • 2 cups plain flour

  • ¼ teaspoon baking soda

  • 1 teaspoon baking powder

To Make the Cake:

- Preheat oven to 350 degrees

- In a large mixing bowl, add yogurt, sugar, oil, and vanilla extract. Whisk for five minutes until well combined.

- Place a sifter over the bowl and add flour, baking soda, and baking powder. Sift dry ingredients into wet ingredients.

- Fold the ingredients together until just mixed (be careful not to overmix the ingredients – should be a smooth batter when it is perfectly mixed)

- Grease a 9 x13” cake pan with butter and transfer batter into tray. Tap tray a couple of times to make sure batter is flat, then bake for 40 minutes

- Using a toothpick, check to make sure cake is baked all the way through (or allow it to bake 2-5 min. longer).

- Flip cake on to cooling rack and allow it to completely cool down

- Once cake is cool, poke rows of holes into the cake (roughly 10 rows of 12 holes)

To Make the Infusion:

- Over low heat, combine water and sugar. Stir until sugar is completely dissolved in water. Boil the mixture for about two minutes until it becomes “sticky”.

- Allow to cool down for a couple of minutes, then add raw honey. Stir again until honey combines with sticky mixture.

- With a large spoon, coat the top of the cake with the mixture, being sure to get some of the mixture into all of the holes you poked in the cake.

To Make the Topping:

- Over low heat, combine jam and raw honey. Stir until jam has “melted” (should be a very smooth texture). Be careful not to overheat the jam because it will burn.

- Pour jam mixture on top of cake and spread out evenly over entire cake. Top with coconut flakes sprinkled over.
