Meatless Monday: Rice and Beans

Rice and bean combination dishes are considered “complete proteins.” A food is considered a complete protein when it contains the nine essential amino acids that our body doesn’t produce on its own. 

This dish is packed with carbohydrates, protein and nutrients you may need for a vegetarian/vegan diet or fitness plan, and even if those categories don’t apply to you, it makes a totally delicious, satisfying and complete meal!

Serves 2

Instructions:

Cook 1 cup rice according to the instructions on the bag. 

Sauté the diced onion in 1.5 tablespoons of olive oil. When onion is softened, add 1 packet of Your Organics black Beans to the pan, mix and add 3/4 cup water; cook on medium heat for 3-5 min. until heated through. Add 2 tablespoons of Mirasol Mole sauce (more to taste, if you prefer) and 1 tsp sugar, stir well and bring to a simmer, adding more water if needed; taste and adjust salt & pepper seasoning if desired. 

Top with optional ingredients as desired and serve over rice.

  • 1 packet Your Organics Ready to Eat Black Beans, 

  • 1 jar Mirasol Mole Sauce, 

  • 1 diced onion

  • 1 teaspoon sugar

  • 1 cup Jyoti’s Basmati Supreme Rice

  • Optional:

  • 1 diced tomato (fresh or canned)

  • ¾ cup Shredded Cheddar, Monterey Jack or a combination 

  • ¼ cup diced avocado

  • Sour cream
