"Faux Risotto" with Parmesan, Peas, and Herbs
This rice dish is packed with flavor from our Sparoza Handcrafted Cooking Blend, and has a creamy consistency like your favorite risotto, without the laborious prep and endless stirring. The Cooking Blend brings together fresh herbs like thyme, rosemary, coriander, bay leaves, and a perfect level of tanginess from the lemon zest, infusing the rice with so much flavor and nicely complimenting the parmesan and peas. A little goes a long way which is why we only added a teaspoon in this recipe.
This makes a nice accompaniment to a roast chicken, fish dish, or veggie main. Or top it with your favorite protein for a complete dish.
Serves: 4 as a side dish, 2 as an entree Cooking time: 45 min.
Ingredients
2 tablespoons olive oil
1 medium diced onion
2 garlic cloves, minced
1 teaspoon Sparoza Handcrafted Cooking Blend with Herbs and Lemon Zest
3 cups chicken or vegetable broth
1 cup gliAironi Arborio Rice
1/4 cup grated Parmesan cheese
3/4 cup Fresh Frozen Peas
salt & pepper to taste
Instructions
- In a medium sauce pan, heat the olive oil over medium heat. Add in the diced onion and garlic cloves and sauté for 3-4 minutes. Add in the Cooking Blend with Herbs and sauté for about 3 more minutes.
- Add in the broth and arborio rice. Turn heat to high and bring to a boil. Once the mixture starts boiling, reduce the heat, cover, and simmer for 35-40 minutes.
- With about 5 minutes left, stir in the frozen peas & parmesan. Cook until the peas are warmed through, the liquid is absorbed, and the rice is tender. Season with salt and pepper and serve hot!
