No one can argue that COVID-19 has had a negative impact on so many aspects of daily life and, as a byproduct, many of our diets are worse than ever right now. Between the fatigue from having to produce endless meals at home, the need to find time between working at home and homeschooling to source groceries (sometime waiting in long lines to do so), and feeling tapped out on strategies to to eat healthy, we are eating less nutritiously than ever. The huge surge in profits since March at the country's large processed junk-food manufacturers proves it.

We all know that upping the unprocessed plant-based presence in our diets is beneficial to our health, the environment, and produces better meals. But it can be a challenge: buying, storing, prepping, and using fresh vegetables & fruits is time consuming, and often the great produce we stock our fridges with goes bad before we can even figure out what to do with it.  

Our solution? - add them to pasta, couscous, or mix into rice 

- add to omelets or frittatas 

- boil in some stock & puree with salt pepper & any herbs for a great, satisfying soup

-  heat in the microwave with a pat of butter, salt, pepper and fresh or dried herbs for an easy side dish

- blend with  yogurt/milk of your choice for a quick smoothie

- stir-fry with our All Natural Chicken Breast, Organic Turkey Filets or Ground Turkey

- briefly sauté in olive oil until heated through, season with salt & pepper and combine with feta cheese, olives, and diced fresh tomato in a veggie wrap
