Smoky Mountain Salmon & Veggies

This one-pan salmon and veggies dish is a quick and easy weeknight meal that takes less than 30 minutes to prepare. The key ingredient is one of our favorite Mealmakers: the Fischer & Wieser Smokey Mountain Whiskey Glaze, which we use as the main seasoning in this dish, aside from salt & pepper. This unique product sauce has rich bold flavors, with a touch of sweetness. A little goes a long way and it serves as a great finishing sauce for meats, fish, poultry, even roasted veggies. Just brush a bit on towards the end of cooking time for your grilled, roasted or baked dish, and be transported to a campfire meal in the mountains!

  1. Preheat oven to 400F. Line a baking sheet with parchment paper. Drizzle the Pinwheel Mixed Grilled Veggies with .5 tbsp olive oil and season with salt and paper. Make sure all the veggies have a light coating of olive oil (use more if necessary to lightly coat the veggies). Place the veggies on the baking sheet and bake for 10 minutes. Remove from the oven. Line the salmon up in the middle of the same pan horizontally, and position the veggies around the salmon. 

  2. Drizzle the salmon with olive oil and season with salt and pepper. Brush the salmon with the Smokey Mountain Whiskey Glaze. Bake for 8-10 more minutes or until the salmon is cooked all the way through. Top with halved cherry tomatoes, if desired.  Our Agrozimi Spelt Orzo makes a nice accompaniment.
