Apple, Chai and Ricotta Muffins

These muffins hum with the chai, energizing spices and apple

and are great for a healthy breakfast/brunch or snacks!

Ingredients

  • 2 cups flour, sifted

  • 1 cup sugar

  • 1 tsp ground cinnamon

  • 1/2 tsp each ground ginger, ground cloves and ground cardamom

  • 1 egg

  • 1 cup brewed Chai Bar chai (any variety)

  • 1/4 cup sunflower oil

  • 1/2 cup apple (a sweeter variety is preferable to a tart one), finely chopped

  • 1 tsp vanilla extract

  • 2 cups fresh ricotta

  • 1/3 cup honey

Instructions

1.  Preheat oven to 400°. Grease a 12-hole, 1/3-cup capacity muffin pan.

2. Place flour, sugar, spices and a pinch of salt in a bowl. Combine egg, chai, oil and apple in a separate bowl, then combine with dry ingredients. Fold in vanilla and 1/2 cup ricotta.

3. Spoon into pan and bake for 20 minutes or until a skewer inserted in a muffin comes out clean. Let cool.

4. Place remaining 1 1/2 cups ricotta in a bowl. Add honey and whisk until smooth. Spread over cooled muffins and serve.
