A Better "Taco Tuesday" for Everyone

Let’s face it: the prospect of Taco Tuesday brightens everyone’s day at least a little bit! Tacos are the perfect combination of textures, flavors, hot & cold elements, and seasonings and they’re relatively easy to put together, if a little bit fussy.

Many of us may have our tried and true taco recipe that we always fall back on, but we’re here to shake things up a bit... we have 5 taco ideas ideas to share; there is one for just about every palate and diet, and we have ingredients that will substantially reduce the labor!

Involve the whole family into the production, making for a fun household dinner activity. And if you’re up to the challenge, try all 5 options and vote on the household favorite!

While each recipe below is different, all of them will accommodate any combination of the elements below. Choose your favorite combinations (or improvise with other ingredients of your choosing!)

Tortillas: corn; flour; or gluten free. Choose from hardshell tacos, or soft tortilla tacos (or mix & match!)

Cheese: Grated Monterey Jack, Cheddar, Queso Blanco, Mexican Cotija, or non-dairy cheese

Veggies: sliced avocado, shredded lettuce, diced tomatoes, corn kernels, black beans, pinto beans, cole slaw, sliced bell peppers

Toppings: pico de gallo, guacamole, sour cream, mango salsa, tomato salsa, hot sauce


The Fiesta Beef Taco- the Classic, Made Better

The Fish Taco- No Takeout Required

Pinwheel’s Yuengling-Battered Haddock Filets go from the freezer to the oven to the tortilla in about 20 minutes! Top them with a crunchy slaw, diced tomatoes, mango salsa, some avocado, and/or a squeeze of lime and you’ve got the perfect fish taco with minimal effort on your part! The added flavor of a corn tortilla is a great complement here if you’re looking to switch up your taco shell game.

The Black Bean Zinger- Flavor-Packed Vegetarian/Vegan Option

Our Smoky Black Bean Chili is so hearty & flavorful that many people are shocked to find out it’s also vegan! It’s ideal for a meatless taco with zing, thanks to a bit of chipotle pepper in the sauce. It’s also studded with sweet potatoes, poblano peppers, and kale for an even greater nutrient punch! After heating up the Chili, we like to add some shredded cheese, pico de gallo, and sweet local corn kernels to create a balanced taco.

Sizzling Ground Turkey Tacos- All the Punch of Beef Tacos, but with a Leaner, Healthier Protein

This one requires the investment of 15 minutes to whip up some of the best taco filling you will find north of the border! Make a double batch of the turkey filling and freeze it for the next time you’re craving turkey tacos- we guarantee it won’t be in your freezer long!

Turkey Filling Ingredients

  • One packet of Store-Bought Taco Seasoning, or a mixture of the following: 1 tablespoon chili powder;1 1/2 teaspoons ground cumin; 3/4 teaspoon paprika; 1/2 teaspoon ground coriander;1/4 teaspoon cayenne pepper; 1/2 teaspoon salt

  • 1 teaspoon olive oil or vegetable oil

  • 1 medium onion finely chopped

  • 3 cloves garlic minced

  • 1 teaspoon dried oregano

  • 1 pound Koch’s All-Natural Ground Turkey

  • 1 (8 ounce) can tomato sauce

  • 2 teaspoons apple cider vinegar

  • 1 teaspoon brown sugar

  • Salt and freshly ground black pepper

Instructions

  1. In a large skillet over medium-high heat, heat oil until shimmering. Add onion and cook until softened, about 5 minutes. Stir in taco seasoning, garlic, and oregano until fragrant, about 30 seconds.

  2. Add ground turkey and cook, stirring occasionally, until almost cooked through but still slightly pink, about 2 minutes.

  3. Stir in tomato sauce, vinegar, and brown sugar. Bring to a simmer and cook until thickened, about 4 minutes. Season to taste with salt and pepper.

  4. Divide filling evenly among tortillas and serve with your favorite garnishes (we like shredded lettuce, diced tomato and avocado)


Taco Salad: Just as Delicious as the Others, but Gluten-Free, Low Carb, and Makes a Great Detox Dinner

Take any of the above Pinwheel taco filling ideas and your favorite toppings and toss them over crispy lettuce, topped with diced tomatoes, avocados, cheese (if you’re feeling indulgent), your favorite fresh or pickled jalapeno peppers, etc., for a salad that will leave you satisfied but not weighed down. Adding a packet of Your Organics Ready-to-Use Black Beans will amp up the protein punch of the dish. For a dressing, consider spicing up a standard like ranch or caesar by adding in some Roasted Hatch Chile Sauce. Two parts dressing to one part Chile Sauce should do the trick!
