Za'atar Chicken Salad with Green Beans & Lemon-Tahini-Yogurt Dressing
Not your mom's chicken salad! This is a healthier and more sophisticated version featuring the smoky flavor of Za'taar seasoning and a creamy, zesty dressing.
Serves: 4; Preparation time: 20 minutes
Ingredients
4 6-oz all-natural boneless, skinless chicken breasts (cooked) or 1 rotisserie chicken
2 tablespoons Za'atar seasoning
1 teaspoon kosher salt
½ teaspoon freshly ground black pepper
6 cups salad greens of choice
1 cup cherry tomatoes, halved
1 green bell pepper, diced
1 cucumber, peeled and diced
½ cup shredded carrot
sesame seeds, for garnish
Lemon-Tahini-Yogurt Dressing
1/4 cup Soom Premium Tahini
1/2 cup plain whole or low-fat yogurt
3 garlic cloves, chopped
2 Tbsp lemon juice
1/2 tsp salt
1/4 tsp pepper
Instructions
Pull or chop the chicken meat into bite-size pieces and mix in the Za’atar seasoning until well combined with the meat. Heat the green beans with 1 Tbsp water and 1 tsp salt on the High setting on your microwave 1-2 minutes, until just tender.
In a food processor, add all the ingredients for the Dressing and pulse until blended and smooth.
In a large bowl, mix the chicken, tomatoes, bell pepper, cucumber, carrots, and the dressing until coated; season with salt & pepper
Arrange a bed of salad greens on a large plate. Top with the chicken salad. Garnish with the sesame seeds.
