Green Beans, Peas and Bacon Salad with PIne Nuts
Everyone goes back for seconds!on this one! This is a warm salad that gives you a hefty dose of green veggies, but also loads of flavor and texture.

Instructions
Cook green beans in a large pan of boiling salted water for 2-3 minutes until just tender and bright green. Remove from pan with a slotted spoon or tongs. Then add the peas to the boiling water and cook for approx. 1 min. Drain peas and refresh both green beans and peas in cold water, then transfer to a serving bowl.
Heat 1 tbsp of oil in a non-stick frypan over medium-high heat. Add bacon bits and heat for 1-2 minutes until hot. Add the pine nuts and cook, stirring, for a further 2 minutes until lightly golden. Drain mixture on paper towels, then add to peas & green beans.
For dressing, whisk the 5 tbsps oil with balsamic glaze/vinegar and tarragon in a bowl and season to taste with salt & pepper. When ready to serve, divide the salad greens on plates, drizzle with the dressing and sprinkle with salt & pepper, and top with the pea & green bean mixture.

340g (approx. 3/4 lb) Pinwheel Local Sweet Peas (frozen)
454g (1 lb) Pinwheel Local Green Beans (frozen)
2 tbsps pine nuts
2 cups salad greens per serving
6 tbsps olive oil, plus extra to fry bacon
1 tablespoon Balsamic Glaze, or 2 tbsp balsamic vinegar
1 tablespoon chopped fresh tarragon
