Orzo & Broccoli Salad

Light, delicious and quick; a perfect side dish!


Serves: 4 Cooking time: approx. 25 minutes


Ingredients

  • 1 package Agrozimi Spelt Orzo

  • 16 oz. Pinwheel Broccoli Florets (frozen)

  • 1 large tomato or 8 cherry tomatoes, chopped

  • Olive Oil

  • 2 teaspoons lemon juice

  • Salt & pepper 

  • 6 oz. grated Parmesan or Feta cheese (crumbled)

  • 2 tablespoons finely chopped Italian parsley or green onions




Instructions

  1. Cook the orzo according to the package directions. 

  2. While the orzo is cooking, preheat your oven or toaster oven to 450 degrees. Toss the broccoli florets in a liberal amount of olive oil until lightly coated. Roast the florets until lightly browned (about 15-20 min. in most ovens), stirring once or twice to get an even roast. Finish with a drizzle of olive oil, the lemon juice, and salt/pepper to taste.

  3. Add the roasted broccoli florets to the cooked & drained orzo. Drizzle with olive oil and mix thoroughly. Adjust salt & pepper, and top with Parmesan or Feta, chopped tomatoes, and optional parsley &/or green onions.
