Orzo & Broccoli Salad
Light, delicious and quick; a perfect side dish!
Serves: 4 Cooking time: approx. 25 minutes
Ingredients
- 1 package Agrozimi Spelt Orzo 
- 16 oz. Pinwheel Broccoli Florets (frozen) 
- 1 large tomato or 8 cherry tomatoes, chopped 
- Olive Oil 
- 2 teaspoons lemon juice 
- Salt & pepper 
- 6 oz. grated Parmesan or Feta cheese (crumbled) 
- 2 tablespoons finely chopped Italian parsley or green onions 
Instructions
- Cook the orzo according to the package directions. 
- While the orzo is cooking, preheat your oven or toaster oven to 450 degrees. Toss the broccoli florets in a liberal amount of olive oil until lightly coated. Roast the florets until lightly browned (about 15-20 min. in most ovens), stirring once or twice to get an even roast. Finish with a drizzle of olive oil, the lemon juice, and salt/pepper to taste. 
- Add the roasted broccoli florets to the cooked & drained orzo. Drizzle with olive oil and mix thoroughly. Adjust salt & pepper, and top with Parmesan or Feta, chopped tomatoes, and optional parsley &/or green onions.
