Fast & Easy Brussels Sprouts Curry
Warm with spices, this is a fantastically nutritious way to enjoy Brussels Sprouts.
Serves: 4 Cooking time: approx. 20 minutes
Ingredients
2 teaspoons vegetable oil
1/2 cup (1 medium onion), chopped
1/2 teaspoon cumin seeds
1 lb Pinwheel Frozen Brussels Sprouts, halved (thawed just enough to cut in half)
1 large tomato diced
1/2 cup veggie stock or water
chopped cilantro and lemon slices for garnish
Instructions
1. Heat 1 tsp oil in a large skillet over medium high heat. When hot, add the onion and cumin seeds and mix for a few seconds. Add the sprouts and cook for 4-5 minutes or until partially browned. Cover and cook an additional 2-3 minutes.
2. Add 1/4 tsp salt and stir for 30 seconds. Add the tomatoes, can of Masala Sauce and 1/4 cup stock or water and cook until the tomatoes have broken down and the sprouts are tender (about 5-7 minutes.)
3. Taste and adjust salt and seasonings; add more stock or water if needed. Garnish with cilantro, lemon slices and serve. Basmati rice and/or plain yogurt make nice accompaniments.
