Cream of Spinach Soup
Comforting and flavorful, this soup is bursting with nutrients, thanks to our local chopped spinach.
Serves: 4 Cooking time: approx. 20-25 min.
Ingredients
1 ½ cups water
3 cubes chicken bouillon
10 ounces Pinwheel Local Chopped Spinach
3 tablespoons butter
¼ cup all-purpose flour
3 cups milk
1 small onion, chopped
2 small cloves of garlic, chopped
½ teaspoon dried thyme
2 tablespoons lemon juice
salt and pepper to taste
Instructions
- In a medium saucepan, combine water, bouillon, and spinach. Bring to a boil and cook until spinach is tender (3-4 min).
- Melt butter in a large saucepan over medium heat. Sauté the onion & garlic until softened (2-3 minutes). Stir in flour and cook for 2 minutes. Gradually whisk in milk. Season with thyme, salt, and pepper. Cook, stirring constantly, until thickened.
- Stir in spinach mixture and simmer for 2-3 minutes. Take the soup off the heat, and add lemon juice and mix well. Enjoy!
Note: For a creamier version (as shown in the photo), after taking the soup off the heat, blend with an immersion blender until smooth before adding the lemon juice.
