Easy Blueberry Hand Pies

With delicious local blueberries from Blueberry Bill in New Jersey, these hand pies come together in minutes to make a deceptively impressive dessert for any occasion.

Ingredients

  • 2 Cups Fresh Frozen Local Blueberries

  • 1/4 Cup sugar

  • 1 T all purpose flour

  • juice and zest of half a lemon

  • pinch of salt

  • 1 package prepared pie dough

  • Vanilla Ice Cream or Fresh Whipped Cream for serving

Instructions

  1. Toss the blueberries, sugar, flour, lemon, and salt together in a bowl. Set aside.

  2. Using a biscuit cutter or the top of a glass, cut circles from the pie dough.

  3. Place a spoonful of blueberries on the dough and carefully fold it over to seal the edges. You may crimp them with the tines of a fork to ensure that they are sealed well.

  4. At this point, you can freeze them in a single layer, then transfer to a storage container to bake off as needed.

  5. Before baking, brush the top with egg wash, sprinkle with sugar, and cut a small slit to vent.

  6. Bake at 400 until golden brown, about 15 minutes.

  7. Serve with vanilla ice cream or fresh whipped cream.
