Easy Blueberry Hand Pies
With delicious local blueberries from Blueberry Bill in New Jersey, these hand pies come together in minutes to make a deceptively impressive dessert for any occasion.
Serves: 8 Preparation time: 40 min.
Ingredients
1/4 Cup sugar
1 T all purpose flour
juice and zest of half a lemon
pinch of salt
1 package prepared pie dough
Vanilla Ice Cream or Fresh Whipped Cream for serving
Instructions
Toss the blueberries, sugar, flour, lemon, and salt together in a bowl. Set aside.
Using a biscuit cutter or the top of a glass, cut circles from the pie dough.
Place a spoonful of blueberries on the dough and carefully fold it over to seal the edges. You may crimp them with the tines of a fork to ensure that they are sealed well.
At this point, you can freeze them in a single layer, then transfer to a storage container to bake off as needed.
Before baking, brush the top with egg wash, sprinkle with sugar, and cut a small slit to vent.
Bake at 400 until golden brown, about 15 minutes.
Serve with vanilla ice cream or fresh whipped cream.
